This dish was so easy !! I just chopped up three tri-color bell peppers and one onion into 1 inch chunks, tossed them with olive oil, salt, pepper, and a dash of garlic powder. Roasted them at 425 degrees for 15 minutes, then cut up some turkey kielbasa, tossed it in and roasted an additional 10 minutes...done! Serve with brown rice and YUMMO!! Total cost $5.30 for a family of 4 plus leftovers for lunch the next day!!
Plus...got the kids involved with a bell pepper "taste test" ! It actually got them excited to eat veggies!
